Day 1

  • Intoduction 
  • Flavor Profiles
  • F. Plating techniques (hands-on)
  •  puree & saucing techniques 
  •  garnishing positioning
  •  fabrication of ingredients for design
  •  will provide one pre prepped dish for everyone to create their own design with trainer's guidance
  •  Students will have time to practice each technique
  • Food Photography

Day 2

  •  Provide Mise en place and recipes for the day (3-4 recipes)
  •  Explanation and walk-through of Recipe #1 which the students will prepare individually or by group
  • Fabricate ingredients of Recipe #1 from start to finish
  •  Demonstration of how I would plate the dish and after students will create their own design
  • Photoshoot of student designs
  • Food Photography

Day 3

  • Explanation and walk-through Recipe #2
  • Fabricate ingredients and execute recipe
  • Demonstration of how I would plate the dish
  • Students plate the dish in their own interpretation and design
  • Explanation of Recipe #3
  • Recipe fabrication and execution
  • Plate up demonstration
  • Students create their own design
  • Photo shoot of dishes
  • Food Photography
